Pancake Tuesday



Who knew with the above everyday kitchen ingredients above you could make these:


minus the strawberries, that was an added touch :)

I use to just grab a box of mix, the kind you only have to add water, to make my pancakes.  
Well times are a changin’ and I made my first batch of homemade pancakes today.

Jamie Oliver’s One-cup Pancake Recipe:

1 cup flour
1 cup milk
1 tsp baking powder
1 egg
pinch of salt
mix it all together and voila, pancake batter!

I added a little butter to the medium-high pan and used a ¼-measuring cup to scoop the batter for each pancake. They are roommate tested and approved!

Tomorrow Lent begins and I’ve decided to give up sugar for 40 days. 
I think that should be long enough to kick the habit!

Invest in Your Life


Food is the best return on investment you will ever receive - you are investing in your Life.

Sizzling Beef Stir Fry
As a business major, that dealings with return on investment, this statement struck a chord with me:
 What you eat is a direct correlation of how healthy you are, and how healthy you are is a direct correlation to how long you will live. 

Sounds pretty obvious right? So why are we still stuffing our faces with deep fried foods, soda pop, chocolate bars, and frozen dinners?  We make the same excuses…never have time to cook…healthy food is more expensive…afraid to try something new…junk food is more available…the list goes on, I’ve heard them and I’ve definitely said them. We need to take the time, choose healthier options and budget for food that will change the quality of our lives. 

There are a few major changes I will be making:

Eliminate Sugar from my diet
(This will be the hardest for me as I am addicted to sugar...there I said it!)

Drink alcohol in moderation
(And when I do drink - vodka and water with a slice of lime)

Plan my meals at the beginning of the week so that I only buy what I need

Use this blog to hold me accountable

Lift weights, do cardio and practice yoga

Drink water and a slice of lemon every morning

This past week I cooked some amazing meals from Jamie Oliver that included Sizzling Beef Stir-fry, Parmesan Chicken and Creamy Smoked Bacon Pasta
They were all incredibly delicious but I will note that my portion sizes aren’t always they best, and it's definitely something I need to work on.

mmmm mmmm Spaghetti!


I am on a mission: to stop eating frozen and processed foods.
This week I made Jamie Oliver's Spaghetti recipe and it was so easy and so delicious! 
I definitely suggest trying it out!

I have tried other recipes this week and have found that cooking really isn't that hard. I always made excuses and picked up the pre-made frozen dinner and I've had enough. Processed food is full of additives and junk, and I don't want that going into my body.

This is just the beginning of my healthy and active lifestyle change. I've decided to document my journey through a blog so I can share it with others who are interested in a lifestyle change.
